Leek patties (קציצות פארסה)

Ingredients:

  • 4 leeks, the white to light green part only, boiled until soft
  • 3 eggs
  • Salt
  • Black pepper
  • 1 teaspoon turmeric
  • 1 onion, finely chopped
  • 1 cup finely chopped parsley
  • Juice of 1/2 lemon
  • 3 heaping tablespoons of coconut flour
  • Optionally, you can add 250 grams of ground beef, seasoned with salt and pepper

Instructions:

  1. Boil the leeks until they are soft.
  2. Squeeze the boiled leeks well to remove any excess liquid.
  3. Chop the onion and parsley in a food processor.
  4. Add the leeks and the rest of the ingredients to the food processor and pulse until combined. Be careful not to turn it into a mash; you want a coarse mixture.
  5. Check for seasoning and adjust if necessary.
  6. Form flat patties from the mixture.
  7. Fry the patties well on both sides in a pan with hot oil until they are golden brown.
  8. Alternatively, you can bake them in the oven at 180 degrees Celsius on an oiled baking sheet until they are golden brown, then flip them gently and bake for another 10 minutes on the other side.
