Fish Fillet with Mustard and Pistachios

Ingredients:
500gr fresh and high-quality fish fillets (any type of fish works)

For the sauce:
4 heaping tablespoons of mayonnaise
3 minced garlic cloves
2 tablespoons olive oil
1 heaping tablespoon wholegrain Dijon mustard
1 tablespoon mixed herbs (tarragon/basil/thyme)
Salt/Black pepper

Topping:
5 tablespoons finely chopped pistachios

Instructions:

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, mix all the sauce ingredients together.
  3. Place the fish fillets in a baking dish and generously spread the sauce over the fillets. (Optional: You can marinate the fish in the sauce for a few hours in the fridge.)
  4. Bake in the oven for about 20 minutes until golden brown.
  5. Sprinkle the chopped pistachios over the fillets and bake for an additional 5 minutes.
