Spiced Honey Coffee Cake with no mixer (Rosh Hashana honey cake)

Ingredients:

  • 3 eggs
  • 80gr sugar
  • 150gr oil
  • 240gr warm strong tea/coffee (3 teaspoon instant coffee or 2 tea bags strong tea)
  • 1 tablespoon cognac
  • 240gr honey
  • ½ teaspoon bicarbonate of soda
  • 350gr self-raising flour (or gluten-free flour + 2.5 teaspoons baking powder)

Instructions:

  1. Prepare the Batter: In a large bowl, whisk together the eggs, sugar, and rum until well combined. In a separate bowl, mix the warm coffee, oil, and honey until the honey dissolves. Gradually combine this mixture with the egg mixture, stirring continuously. Add the flour and bicarbonate of soda, and mix until smooth and well combined.
  2. Bake: Pour the batter into a baking pan and bake at 150°C for 45-60 minutes, or until a toothpick inserted into the center comes out clean.
  3. Rest: For best results, leave the cake covered in a dark, cool place for 3-5 days before serving to achieve a moist and flavorful texture. Enjoy!
